Partially unplugging the headphones causes an electrical short, mixing both channels (L and R) with each other.

The two channels being applied in series across the headphone transducers causes sounds recorded on both channels to cancel each other out, while sounds unique to either channel remain. Since most vocal parts are center panned, they are almost entirely silent.

You can even apply this effect in software to create your own poor-man's karaoke tracks!
